  • 1/2 lb salted codfish
  • 1 can (19 oz) ackee, drained
  • 1 medium onion & tomato, diced
  • 1/2 red bell pepper, sliced
  • 2 stalks scallions, chopped
  • 1 sprig fresh thyme
  • 1/4 Scotch bonnet pepper, minced
  • 2 tbsp coconut oil

Instructions

  1. Prep Fish: Boil the saltfish for 15-20 mins to remove salt. Drain, flake with a fork, and remove any bones.
  2. Sauté: Heat coconut oil. Add onions, peppers, tomatoes, scallions, thyme, and Scotch bonnet. Sauté for 5 mins.
  3. Combine: Stir the flaked saltfish into the vegetables. Cook for 3-4 mins to absorb flavors.
  4. Fold Ackee: Very gently fold in the ackee (do not mash it!). Simmer on low for 3 mins and serve.
Pro Tip: Ackee from a can is already fully cooked and very soft. Always add it at the very end and fold it no more than two or three times to keep the beautiful yellow pods intact!
